St. Patrick’s Day is just around the corner, making it the perfect time to add some Irish flair to your meals!
Colcannon is traditionally made by combining cooked and shredded cabbage with mashed potatoes and topped with a puddle of melted butter in the middle of the taters.
The Idaho Potato Commission (IPC) created a unique spin on the Irish classic by adding sautéed leeks and green onions. After the mashed Idaho potatoes are cooked, incorporate the cabbage, onions and leeks and top with freshly chopped parsley. If you’re preparing this on March 17th, pair with corned beef, of course!
