The International Potato Center (CIP) and Germany-based nonprofit organization Crop Trust are releasing CIP-Matilde, a new potato they’re billing as disease resistant. The variety was developed by farmers, breeders and scientists in Peru by identifying wild potatoes with resistance to disease and incorporating this resistance into cultivated varieties. After 11 years in development, the outcome is a tasty tuber that also withstands late blight, according to the developers.
